Skills Aquired: In this class you will master cooking on charcoal to create authentic and rustic Vietnamese street food and learn to balance classic Asian flavours of sweet and sour and spicy to create your own dipping sauces.

  • Char-grilled squid served with a homemade sweet chilli sauce.

  • Char-grilled prawns served in their shell and accompanied by three dipping sauces - a traditional nuoc cham dipping sauce, a salt, pepper and five spice rub and a green chilli and ginger Vietnamese dipping sauce and a green mango salad

  • Cha ca - Ha Noi’s famous turmeric coated fish cooked at the table on a charcoal burner with dill and an aromatic sauce.
