Breakfast is a hearty meal in Southeast Asia designed to keep you going for hours. It’s time to ditch cereal and learn how to make a classic Thai congee (rice soup), a stuffed Thai omelet and some Thai coconut pancakes that are a favourite at every morning market in Thailand.
Congee is a comfort food, a gentle start to the day with carbohydrate and protein to fuel the body. We will make a fish and ginger congee with toasted rice.
My breakfast of choice while living in Thailand was a stuffed omelet kai yat sai. Bursting with flavour and served on rice with chilli sauce and cucumber it is still a family favourite.
End with Thailand’s famous kanom krok: chewy coconut pancakes: a double layered pancake with a crispy bottom and creamy centre topped with spring onion, corn or pandan flavour.
